Mashed Potato Salad


This is basically the same as the regular potato salad, but it uses hot mashed potatoes.  It is served warm or at room temperature.  I have just made duck cracklings so have used them for garnish on this salad.  Another nice garnish would be crisped prossciutto.

Mashed Potato Salad                          serves 8

6 medium potatoes
6 eggs
1 medium white onion diced
2 to 3 large sweet pickles
1/2 C. diced celery
1/4 c. diced pimento
1 C. mayonnaise
1 T. prepared mustard
1/2 t. salt
1/3 C. liquid from sweet pickles
salt and pepper to taste

Peel and boil potatoes. Hard boil eggs. Dice onion, celery and pickles. Roughly chop the hard boiled eggs. Reserve 1 egg for garnish.

Mash potatoes while hot and add diced hard boiled eggs, onions, celery, salt and pepper. Mix mayonnaise, mustard and pickle juice in separate bowl (be sure this mixture is quite thin). Pour over hot potato mixture and stir. Garnish with cut up egg and paprika. Chill.
